This origin is one of the first beans we worked with when we began experimenting with making chocolate. We are excited to be able to share this with you, as it is hard to come by. Because of this, we are only able to offer it several times a year depending upon shipping and in-country harvests.
The cacao used to make this chocolate is directly traded from Cacao Fiji through our partners at Meridian Cacao and grown from Forastero, Amelonado strain trees. After harvesting, it was fermented in four-tiered hardwood boxes before being sun-dried on raised beds before being shipped.
Although the tasting notes include cashew, caramel and vanilla, we feel this is one of our more unique tasting origins with bright fruit notes as well.
