One of the first sources we experimented with that began our journey with craft chocolate comes from the Camino Verde Fermentary in Ecuador.
The cacao beans are directly traded and certified organic. Before we received our beans, after they were harvested, they were bag fermented in a humidity-controlled room before being dried on raised tables in the sun.
You might taste notes of fudge, almonds, flowers, or even hints of bourbon when enjoying these bars, but you might come up with some different notes of your own.
