We have had many requests for a traditional "bitter" or semi-sweet chocolate bar. While this origin is still 70% chocolate, and is surprisingly fruity, it has some of those bitter undertones that deep, dark chocolate lovers crave.
The cacao beans are directly traded through our partners at Meridian Cacao from the Bejofo Estate Fermentary in the northwest Sambirano valley of Madagascar and are certified organic. These beans are of the Trinitario varietal and were fermented in 3-tiered wooden boxes before being dried out on concrete patios and raised beds.
The initial note is bright fruit, with a slightly bitter yet smooth finish. You might taste notes of citrus and ripe, red fruit when indulging in this bar.
